Did Beverages add Fructose? Application of Laccase in Fructose Detection
Dr. Shuen-Fun Lin, Professor of Department of Life Sciences of NUK, presided over the "Microbiology and Biochemistry Laboratory" and led graduate students on laccase research. The research found that the laccase can detect whether the ingredient of beverages include fructose immediately.

In order to prevent patients of hereditary fructose intolerance to absorb the artificial fructose from beverages, Professor Lin and his research team has developed this quick and cheap detecting method. By dropping 2cc. laccase into the targeted beverage, if the original color of the liquid changes to amber blue; it means that this beverage included fructose.

This research was published in Federation of European Biochemical Societies (FEBS), and obtained its patent from Taiwanese Government.
